Khinkali
Hand-pleated dumplings with a dough knob on top and hot broth inside, each folded more than a dozen times. Served in threes, 80 g each.
How to eat khinkali
No cutlery
Pick it up by the knob with your fingers. A fork only gets in the way.
Small bite, side first
Bite the edge and sip the broth first. Careful, it is hot.
Then the rest
Eat the filling and the dough around it until only the knob is left in your hand.
Knob on the plate
You don’t eat the knobs. The pile on your plate shows how many you’ve had.
Three more?
Most people order another round.
From the oven and grill
The whole supra on one table
